darndarndarndarn..

....huh... when you look at darndarndarn it sorta looks like damndamndamn

So, OK, all this darn/damn stuff is because for the past 2 weeks, I have gained 0.2 lbs.

( ..and I thought one was supposed to "Watch your Weight" go DOWN..)
Yes, I know, doesn't seem like a lot - but when you are trying and giving up what you really like to eat...Ok..well not everything...

I still do like my morning coffee with Vanilla Coffeemate - and no, not the fat-free or the sugar-free..

So, yes, that is a vice...and yes, I am not willing to give it up. And yes, I know that some people would say I should...but I'm not.

I will, however, continue to eat better, watch my portion sizes, take my vitamins and drink my water.
Anyway, after I posted my Mother-in-Law's beautiful "Corn Flake Macaroons" , some of you asked for the recipe.

And I got it from her right away.

And I mean to post it sooner.

So, here it is, complete with the lovely photography by moi...


Corn Flake Macaroons


2 egg whites

1 Cup Sugar

1/2 tsp. Vanilla

2 Cups Corn Flakes

1/2 cups chopped nuts

1 Cup Shredded Coconut

Beat egg whites until stiff enough to hold shape.

Carefully fold in sugar, vanilla, corn flakes and Coconut.

Drop on parchment paper and bake at 350 degrees for about 15 to 20 minutes.

Remove from oven and immediately remove cookies to cooling rack..

then enjoy....but not too many or......



I'm just sayin'.......

Your Mother in Laws cookies sound and look yummy!!! Chris love coconut so I'm sure he will like these. I will have to surprise him with them when he comes in from the woods from hunting.

I know the feeling. In my whole life I never had a weight problem. If needed, I could lose it in a moment. But something happened at 52 and then again at 60
this is on my list of questions to wherever I go after death. I want that fixed! There. I feel better.

Don't fret,.2 is redeemable rather quickly. But not if you eat those delicious looking macaroons!! YUM! I think I will make those for the Halloween social at church. :)
My sister made your Pineapple-Angel Food cake for our Kentucky getaway this past weekend and they were a hit with everyone there! I love when you share recipes.

WHY is it that women can literally starve themselves and NOT lose any weight but a man can cut out one dessert a week and loose 5 lbs?!!! It’s just not fair! Hang in there… We are rooting for you!!
