Kitchen Corsages and excuse-busters..

Yes.

Corsages.

Right in my kitchen.

Lookie..





Yes. Celery and lettuce cores. But aren't they pretty? I could dip the celery core in paint and have roses all over...

OK - now for the "excuse busters" - Mr. B went shopping and brought home all my Weight Watcher's wish list of stuff - celery- 2 kinds of lettuce- grape tomatoes, "spray" dressings, FF Cool Whip, ginormous grapes. So, I bagged them all.

I have good yogurt, 94% FF popcorn, baggies of fresh stuff, high fiber bread, AND....one really great recipe from Kathy (the WW Lifer)

Sometimes we disagree on what's "good"..but this time, I have to hand it to her. Not only did I like it, Mr. B and his Mom loved it as well. So here goes:



1 box of Angel Food cake mix

1 20 oz. can of crushed pineapple in it's own juice - undrained.

Here's the hard part. Mix them. Pour into not a special angel food pan but an oblong cake pan sprayed with Pam and bake at 350 degrees for about 40 minutes (of course- remember we're in high altitude) so check yours until it's golden brown. Easy-peasy, huh?

Somehow, it has the texture of a macaroon - and she said it's even better the next day - chilled- with a little FF Cool Whip. YUM-O!

(Mr. B's disclaimer: "It's not as good as your pineapple pecan cake with cream cheese(and butter) frosting, but it's pretty tasty..")

So, I have no excuses not to really think about what I am eating. And, although my vanity has suffered by not being able to find cute clothes in my size (having no chest doesn't help with the "fitting") I am doing this more for my health.

It would really suck if I had beat cancer only to die of a heart attack.

So, I will every once in a while share what I feel is a recipe good enough for company AND skinny people. And maybe I won't even tell them is Weight Watchers.

Hmm..Mr. B called the other night on his way home and said "Grab your camera and go outside.."

So, thank you God, for kitchen corsages, sisters with great recipes, wonderful husbands, and your beautiful painted sunsets.

And thank you God for all my blogging buddies' love, support, humor and caring.

Hubby has decided he will do the WW but not actually join....it is up to me to keep him on track...explained the points and the flex points but told him he oculd not use the flex for extra Coors Light....he was devastated....may be a bumpy road....
