Happy Cinco de Mayo,,,

...pronounced "sinko dee MY.oh".as in the 5th of May...not mayo..as "hold the 5 tablespoons of mayo on my sandwich.."..


So, in honor of Cinco de Mayo..here are dos recetas fáciles de mexicano-Inspiró...{two Mexican-inspired recipes....}

So, happy Cinco  de Mayo.....oh, oh..I forgot that yeterday was "Star Trek" day.......

You know...May the Forth be with you...??



Mexican Wedding Cake with Cream Cheese Frosting..

2 C flour
2 C sugar
1 20-oz can of crushed pineapple, do not drain!
1 teas baking soda
1 teas vanilla
3/4 C chopped pecans

Mix all in a bowl, being careful to incorporate all the dry items, and pour into 9 X 13 cake pan sprayed with Pam

Bake @ 350*  for 35 ~ 40 minutes...frost while warm with the following frosting...

2 C powdered sugar
1/4 lb (one stick) real butter, softened
1 block of Cream Cheese, softened...

Mix VERY well and frost the cake while it is still warm to the touch..
{optional..sprinkle a few of the chopped pecans on top}

enjoy...oh, and refridgerate..

1 can refried beans {fat free}
1 can corn
1 can garbonzo beans
1 can pinto or kidney beans {I always use kidney....I suppose you could use black beans as well}
1 can diced tomatoes
1 cup salsa
1 cup water
1 onion, diced
1 tsp. cumin
cilantro, chopped
dash of seasoning salt

Combine all in a large pot and cook over medium heat until warmed through.  Serve with shredded {low-fat if you prefer} cheese amd sour cream {I use Greek yogurt instead} and tortilla chips..{baked are good}

Colleen, you did so well being bilingual. Maybe not enough to put it on a job resume, but maybe enough to get by when traveling in Mexico... it's all in the accent! Not sure how much you can use that in UTAH! I have been missing a bit, but should be back to my ole' self next week.... Have a great Cinco De Mayo, my little Chihuahua!!!!

Isn't there some liquor involved in Cinco de Mayo? That's what I want to celebrate.

Funny, I read the other day (wish I could remember where) that Cinco de Mayo isn't celebrated in Mexico at all. It's one of the mostly insignificant days (kinda like our Columbus Day) and it's the American's who decided the Mexican's needed a Holiday here. Hmmmmm....

Well I have never heard of Cinco de Mayo but funnily enough we had a mexican meal last night. How about that for coincidence?
